D-Tagatose (CAS: 87-81-0) is a carbohydrate, a ketohexose. Tagatose is used as a sweetening agent in beverages, foods, and pharmaceutical applications.
Like other sugars (fructose, glucose, sucrose), D-Tagatose is also used as a bulk sweetener, humectant, texturizer, and stabilizer, and may be used in dietetic foods with a low glycemic index.
D-Tagatose is safe for use in food and beverages. It has been used in pharmaceutical products.
Can be used as a low-calorie sweetener, as an intermediate for synthesis of other optically active compounds, and as an additive in detergent, cosmetic, and pharmaceutical formulation.
D-Tagatose acts as a low-calorie functional sweetener. Tagatose can be used as a preservative in cosmetic, detergent and pharmaceutical formulations.Tagatose is also used in diet soft drinks, chewing gum, frozen yogurt and non-fat ice cream.
D-Tagatose may interact with some prescription drugs, especially blood sugar lowering drugs, and could cause hypoglycemia (dangerously low blood sugar levels).
D-Tagatose is a functional sweetener. It is a naturally occurring monosaccharide, specifically a hexose. It is often found in dairy products, and is very similar in texture to sucrose (table sugar) and is 92% as sweet, but with only 38% of the calories.
Since it is metabolized differently from sucrose, D-Tagatose has a minimal effect on blood glucose. Tagatose is also approved as a tooth-friendly ingredient.

1. Low glycemic index, tagatose has very similar sweetness to sugar while its glycemic index is very low.
2. Antihyperglycemic effect, tagatose reduces blood glucose level in the liver by promoting glucokinase activity which promotes transfer of glucose to glycogen. It also inhibits digestive enzymes and degradation of carbohydrates in small intestine which result in inhibition of carbohydrate absorption in the body.
3. Physical characteristics, active maillard reaction of tagatose enhances flavor and brown coloring performance and is usually used for baking, cooking and with high-intensity sweeteners to mask their bitter aftertaste.
